Recipe suggestion for breakfast/brunch

autumncatI'd ask over in Hip_Domestics or a food community - but I am tired of the snarkiness on the LJ communities - and I know there are some very good cooks on my Flist.
I have searched online - google and allrecipes but there are so many recipes with titles that sound right but really arent't.
What I am looking for:
A fairly easy/simple recipe for a breakfast/brunch casserole (for Christmas morning).
Things to include - home fries, eggs (scrambled or the like preferably), cheese (we likes cheese), bacon (well done is a must).
Other things we like - biscuits, southern gravy, pancakes, waffles, french toast. (recipe does not have to include these things - included for reference)
What not to include:
Sausage, mushrooms
I was thinking of something we could throw together and let bake while we were opening gifts.
So, does anyone have a recipe or recipes that you have tried or heard about that sounds like it might fit the bill?

Date: 2005-12-18 08:00 pm (UTC)use frozen potato shreds (for hash browns) as your crust: grease you 9X12 (or whatever) pan and then press the potatoes into position. sprinkle with crumbled cooked bacon or diced ham, shredded cheese, sauteed onions and peppers if you like (make sure the moisture is well cooked out) beat together eggs and milk, and pour on top. Bake at 350 until set. let cool so that it can be cut and served in squares.
If you prefer, you can pre bake the potato crust so it's crispy all through. you can also use pie crust or croissant dough for the crust.
You can make up pancake batter the night before, and just pour and cook (a big electric griddle works best for large numbers)
a fruit salad, macerated with a touch of fruit liqueur or brandy the day before is festive, easy and tasty.
